A friend of mine doesn’t particularly love tiramisu (I know, I know…). Well, she doesn’t like the classic tiramisu, too creamy, she says, but there is one type of tiramisu she loves, with caramelized apples, which are great with coffee, she says.
Well, she’s right, we tried it and it’s delicious. What’s different in this tiramisu recipe, apart from the apples? This variety of tiramisu has no savoiardi biscuits and therefore no layers to build.
Here is the recipe with ingredients for four people:
2 Golden apples
2 tbsp cane sugar
1 tsp cinnamon
4 cups of coffee
150gr (5 oz) mascarpone cheese
2 tbsp double cream
3 Speculaas (Dutch spicy biscuits)
Bitter cocoa powder
4 squares of dark chocolate
Prepare the coffee and set aside to cool.
Peel the apples, chop them and put them in a small pan. Add the sugar, a tablespoon of water and the cinnamon. Cook for 10 minutes on a very low heat, never stop stirring. Turn no the heat, pour the coffee (leave two tablespoons for later), and caramelize the apples for two more minutes. Place the apples in four ramekins and put aside to cool.
In a bowl, whisk the mascarpone cheese with the cream, pour the mix on the apples, and put the ramekins in the fridge for two hours.
Before serving, crumble the speculaas and mix them with the cocoa powder. Use this mix to cover the top of the tiramisu. Complete with dark chocolate on the side.
